Tradition of wafer making in Hungary – Part III. Reviving the tradition of baking so-called ’molnárkalács’ (a thin waffle-like unleaved biscuit snack) in the village of Borsodnádasd in Northeastern Hungary. The tradition of baking these wafers had all but died out in the village, however due to a concerted effort of local people, the tradition continues and folks have passed on the craft. After governmental changes in 1990 the local factory closed, causing an unemployment crisis in the region and depression. This project of reviving a local tradition was started in an effort to boost local morale. The old metal wafer baking forms were gathered and documented. Those who still remembered how to make the wafers taught others. The snack food is now produced in the village which also sponsers a yearly wafer baking festival. This tradition has been added to the official list of intellectual Hungarian Heritage. By Arkhely Fruzsina and Juhász Katalin.
